An Easter Casserole Recipe

Because nothing is better than eating the left overs the next day for lunch. Mmm a ham sandwich and Potato casserole. Since I enjoy it so much more the second day I thought I’d share the recipe with you. Ps there is apparently two versions of this, so I will share both! I was asked to bring funeral potato’s to dinner last night and they sounded familiar, so I looked up the recipe and there was only slight differences between my forever favorite family recipe and the new one. So here it is.

Yummy Potato Casserole (this is the technical name in our family recipe book)

1 2pound bag of frozen hash browns

2 cans cream of mushroom soup (here’s one of the edits, last nights recipe called for 2 cans of cream of chicken instead)

16 oz tub of sour cream

400 grams chopped/shredded ham (last nights recipe also omitted this step)

1-2 cups shredded marble cheese depending on how much you love cheese! (last night we used sharp cheddar instead)

Then the topping is normally Parmesan cheese sprinkled on top, last night I did a cup of crushed corn flakes and 2 tbsp melted butter sprinkled on top. (both before baking)

Mix all ingredients in a large bowl, put in a shallow greased glass casserole dish. Bake at 350 for 1.5 hours.

It couldn’t get any easier. Its only 2 steps! Its one of my favorites because its a whole meal rolled into one dish. And like I said for some reason the left overs always taste even better! And I had to add that last picture because my lovely sister bought me a super cute apron and I had to show her its going to good use!

First Trimester Down!

2 to go. But I hears from lots of other preggers that the first was the slowest? I thought it was not bad. But I was one of those lucky few to not have any unhappy symptoms! My Doctor told me not to tell anyone that either but why not I say! Anyways thats three months down, and I am doing one fun little photo project through the pregnancy. I saw it a year ago somewhere on the internet? A woman took a picture at the beginning of each month and held up the number of months in fingers in each picture. At the end you watch the belly grow through 9 months and ends with a baby! Cute and fun and much easier than the once a week attempt I was going to do. I dont think I made it past one week of doing that haha.

You may have noticed I plan to stretch that same shirt through each month too! I wanted to have a similar theme and I thought those ruffles would look super cute across a big belly! Which is growing haha. But no “bump” yet. No right now its just the thicker waist stage. I took this picture at 11 weeks with hopes, but as I shared it with my mom she so nicely asked me is that a baby bump? or a chip bump? haha. She knows me better than anyone! I would say it was the later of those two choices. But I’ll share it anyways just for fun!

Thats changing slightly as I hit 14 weeks this week. Got to hear the heartbeat for a few seconds before the doctor shut off the machine as fast as ever. I got the hear 4 different versions of my own but the second we found the tiny one we got a pat on the back and off you go. But hey at least we heard it! Little Baby C is doing well so far and hopefully soon we find out pink or blue!

How to Eat a Cupcake

You may have noticed there is a lot of cupcakes that go through this house. And with that taste testing. So of course I have the best way of eating a cupcake! It was one day when I was watching a cake boss marathon, now I feel the need to always share this idea on deliveries. Here it is, pay close attention!

1 unwrap the cupcake

2 pull the bottom off the cake

3 place the bottom on top of the frosting

4 eat your sandwich cupcake with perfect ratio of frosting/cake!

Some Extra Special Baking

You may have noticed I’ve been doing a lot of extra baking lately. But you may not know that I have been baking something extra special. In fact its been in the oven for the last 3 months! Have you caught on yet? Yep we have a cute little bun in the oven. We are due October 18th, its a little mind blowing to imagine we’ll have a baby of our own this Christmas! Its very exciting in ours and both of our families. We cant wait to meet this little one!

So thus begins me being able to talk and take on baby projects on the blog! I would love to hear any cute idea’s you have seen or done. I have been eyeing some knit baby blankets online. I think I may be attempting one soon, so I will let you know how that goes haha. Keep in mind I’ve only completed dish clothes in the past and the few other projects are laying pulled apart in my basket. But I am excited about it! So I will go in thinking positive!

I wanted to share one more picture. When we got to share the news my mom and dad were flying in for the weekend. So I quickly threw together a cute little airport sign. Ive always wanted to do one when picking them up, and this was the perfect time! It was a big hit! And I love that we can always look back and look at them!

Flower Pot Cupcakes!

About a year ago I bought some silicone baking cups. I could not resist because they are little clay flower pots. The possibilities with these are endless. I really should be using them more but I always forget they are tucked away with everything else. But with Easter and Mothers Day on the way I thought I better perfect them!

Another reason I bring them up again is that I was at Michael’s the other day and they are back in stock. So you too can make these fabulously easy and beautiful display. Today I choose to use a couple fake flowers I had laying around the house. I’ve also used scrapbooking fabric flowers in the past. I was going to do a couple paper flowers too but I will save those for another day. But really there is so much you can do with them. I wanted to use some real flowers too. But nothing grows in my back yard in the desert so no luck there.

And since I am talking about the versatility of these adorable little pots I’ll bring up another project I want to do with them. Do you have little boys and your thinking maybe the flower thing isn’t going to be a hit? You can make them rough and tough! Use chocolate cake cookie crumbs and pudding. Add a couple gummy worms and you have dirt and bugs! So cute! So you really can make these into anything your event desires. Be creative!

The best part they are reusable because they are silicone. So you can play with them over and over and over again. And each time you will have a different arrangement! And ps if any of you do go out and get them (pps I think they are only like 7$ per 6) I would love to see what you come up with! I already cant wait to play with them again!

A BBQ Kind of Weekend

Well we bought a BBQ at the beginning of last week and pretty much ate out of it every night. Then we got invited to two more BBQ’s this weekend! You’ve got to love living in a state where summer starts in March. And since one was a family BBQ I made birthday cupcakes! Yup in two days 80 cupcakes went through this kitchen (ps I didn’t eat any! truly a miracle!)

Here’s the wonderful spread of cupcakes! Nutella and Cookie’s and Cream. I even experimented again with the Cookies and Cream. Always perfecting my flavors. So this time I stuck a full cookie at the bottom of each cake! It was a tasty surprise for everyone’s first bite!

Flaming Strawberry Cupcakes!

I have constant requests of cupcakes all the time. Usually on facebook by random friends with pictures of great cupcakes. I always want to try them out but sometimes time just get away from me. Same thing happened when a friend posted a great picture right before new years eve this year. I thought I am definitely doing it tonight! Well we all know how long ago December was! But I finally got around to doing it. And wow are they just so beautiful. A regular cupcake with a hallowed out upside down little strawberry. Then the fun part! Fill it with alcohol, and light it on fire! (I used my Pear Vodka first and it didn’t light so test yours first.)

I just love the way they look. What a very sophisticated way of  having “candles” on your cupcake. They even blow out nicely. I just think this is too much fun! I cant wait to do it again. I think this will be a traditional celebration cupcake in our house!

And even though this has already been a fantastic cupcake kind of weekend, guess what? I have even more coming tomorrow! A big family BBQ birthday afternoon. With lots of yummy cupcakes! Hope everyone is having as “sweet” a weekend as we are!

A Special Birthday Order

Today I made an order for 2 dozen Cookie n’ Cream cupcakes. (I might add these are my favorite cupcakes!) Mmm I don’t think anyone could not love them. Handfuls of crushed cookies whipped into my buttercream frosting, Paired with chocolate cake! Then I even top them with half a cookie each, just for an extra cute factor!

These were an order for an 83rd Birthday party! How special to be celebrating with friends and family (and cupcakes!) at 83. Her lovely daughter had been at a shower I catered back in December and was hooked on lissables cupcakes! So we worked together to pick something perfect for her sweet tooth mother. Ps isn’t that adorable She’s a great-grandma with a sweet tooth. I think that’s perfect! I cant imagine being a mom yet, let alone my babies, baby, having a baby! Those are the good moments in life. So I wish her the sweetest (in many ways) 83rd Birthday!

A Different Kind of Birthday Cake

Isnt it funny how someone who bakes all the time only lives by family who doesn’t love cupcakes. ( it’s possible not to love cupcakes?!) So for my sister in law’s birthday instead I made some Chocolate chip cookies! Yum yum, I just finished the extra couple I had left over for breakfast!

Last Year I tried to mix the idea’s. I made a cookie cake. A chocolate cake that looked like a cookie. This year I made another cookie cake. But this was a mini cake made out of cookies. I don’t know which one is cuter! So Happy Birthday Jessica, wishing you another happy year with all your boys.

Happy Birthday Love

As some of you know this Sunday was a little special for us. Brandon is ringing in his 26th year! (what when did this happen?) When we met he was just 22 and we started dating a year later. And now he’s 26! Isn’t it weird how life can do that so fast.

Well its been an amazing year, and it was definitely a fun day together. We kicked it off with a baseball game. (In the freezing cold!) Even though they didn’t win it was still fun to watch him play again. We had a little traditional Birthday lunch at Chipotle. They even gave him a mini bag of chips to celebrate. And then Brandon did the unthinkable! He pulled the veto card on a no cake birthday! I had his cake all planned out (cant tell you because I still plan on making it) But it was his birthday so no cake. Even though he married the cake lady. But understandable as we were going out for a big dinner! We have a favorite little place, a small hole in the wall gem. Its a little Italian place and its “our” place. So we celebrated there with his sister and her husband. Great meal, great conversation, great night!

And he even let me sneak a couple pictures in! That was like a gift to me! Brandon hates pictures, so I loved that I got this cute one of us! It was a nice birthday for just the two of us. The last one of its kind! (wink wink)

So Happy Birthday to my favorite person. You make me laugh every day and that’s the greatest feeling in the world. I couldn’t imagine life without you. I hope we celebrate many more of these amazing days together. Love you so much!
