BBQ Crock Pot Chicken

Found this recipe on pinterest. I love finding recipes on there. But I never actually do it. But tonight I did! One of my friends inspired me. She’s now started a board of all the recipes she’s pinned and actually made, with mini reviews. Awesome. I love how it inspires people to do stuff. So I found this ridiculously easy recipe. And dinner was set.

BBQ CROCK POT CHICKEN

4 chicken breasts

1 bottle BBQ Sauce, your choice, we used Kraft original.

1tsp Red chili pepper flakes

1tsp garlic power

1/4 cup vinegar

1/4 cup brown sugar

Combine all and submerge your chicken breast in the mixture. Cook on low for 4-6 hours.

Could it be any easier? It sure makes your house smell good too. And since there was only two of us I left the others in the crock pot another couple hours. They were already so tender that when I pulled mine out it broke into pieces. So I am shredding the left overs for buns tomorrow. Yum!

On the side tonight I made my favorite vegetable. Sweet potatoes. Tonight’s version was sliced, spiced and baked. Peel it, wash it off, cut into thin slices, line a pan with tinfoil and lay pieces in a single layer. Drizzle with small amount of olive oil, and sprinkle with seasoning salt. Bake for 20 minutes on each side at 400. Watch them though because they can burn easily. Tonight I let mine burn a bit but then they are just crispier, so not harm there.

There you have it, easy peasy dinner. I like to think its a little healthier than my normal mac and cheese with ketchup 😉 It was a little dry, not sure what I could do to fix that, but we’ll see if the shredded version tomorrow makes up for that.

And finish it up with a contraction stopping pill and some water for dessert. Cant wait to get off these, 2 more weeks!

Tiffany Blue Wedding

Last summer seemed forever away when we got hired to both do cake and video respectively. But time sure flies when your six months pregnant! And although we were travelling like crazy we still made it all the way back to Canada to do our friends wedding. Her whole theme was Tiffany blue. So it seemed fitting to have a Tiffany Box cake! And that surrounded by 100 cupcakes!

And although I will never again do a wedding 6 months preggers it was still very fun! We had some up and downs, The face of the bride seeing the whole display the first time, and Brandon pouring (accidentally) coffee all over my moms new laptop in the middle of cake decorating time. But everything worked out in the end. We were able to enjoy the wedding while still working hard on it the days leading up and for Brandon all night. I’ll be sure to share his video when its finished as it will be very touching.

All in all a great night for us and their whole family. I just love weddings. What a happy moment to bring friends and family together!

Cant wait for the next L’Heureux wedding!!

Happy Fourth Of July!

For all my American friends and readers, Happy 4th of July! I hope your all having BBQ’s, eating junk and sitting under fireworks tonight! Last year was my first 4th of July that I was living in the states. Lets say Las Vegas goes ALL OUT! We had an amazing day around a pool with friends and family. And then watched the entire night sky light up with fireworks. I vowed this year to do the same. And yet I am not there. So someone eat some hot dogs for me!

Last Year I also made my first 4th of July dessert! And what a first time that was. I remember my mom thinking this was just another cake. And then watching her face light up when that first slice came out! It was an original idea on my behalf but I have seen it since then many times. But if I do say so myself, mine is always my favorite version! One flag cake coming up! I still love it beyond words. I hope I can make another one next year!

Baby Shower Cupcakes

A couple weeks ago I went to a baby shower for a friend. Since I am the cupcake lady I was in charge of bringing cupcakes. So I upped that and went for double. Everyone was so impressed with the real cupcakes that by the time they opened the gifts they were giddy with surprise over the cuteness. I cant decide which ones I liked better!

The cupcakes were Chocolate with alternating white and pink buttercream frosting. The pink version had white chocolate shavings and the white had tiny edible pink pearls. So delicate and beautiful. Can you tell it was a little girls shower! Very fun to do this while I am completely in blue and green mode.

And here was the other cupcakes! The baby wash cloths wrapped in themselves to make cupcakes! They were definitely a hit when she pulled them out. You gotta love when your gift gets a big “aww” from the crowd! And its such a simple idea too!

Just loved being at the shower. We played games and everything was about babies. I might add I was talented enough to win the “mold a baby out of play dough in 5 minutes” contest. It was a cute game Ive never seen before. Everyone was given a lump of play dough and you had 5 minutes to mold a little bay out of it. Then the Mom to be got to choose her favorite. I may have the extra experience from playing with fondant making things! But it was still a very cool game to see what everyone did! It made me excited about the baby shower we will be having this fall! Yay babies!

Happy Anniversary Cake

You may notice my favorite cake in my banner on the blog. It was the first wedding I did. How exciting and some how its already been a year! How crazy is that! And as if I wasnt too excited about the first cake, the bride asked me to secretly make an anniversary cake for her husband. I love it! Such an amazing experience for me!

So lets honor the past with my favorite cake and the new one too! She only wanted the top tier this time which made it different but still theirs.

Cake and Love they just go hand in hand 🙂

Mini Cupcake Stands

As you may have noticed I have just a few cupcakes and cake stands. These are the worst to collect since they are massive and do not store well at all! But have no fear I have the best solution to always wanting more and no space! Mini individual cupcakes stands!

They are easy peasy to make! Grab some spare card stock, scissors and download this template. Its so perfect! I just love them. Just cut around the edges and slide the stand together. You may want to add a dot of hot glue to make it more sturdy, as well as the top to the stand. Your possibilities are endless with this. Patterns, colors, even vary the size of your template! I cant wait to make more now that I know how easy and cute they are!

Strawberry Trifle Cake

This is one of my all time favorite recipes. I always begged my mom to make it every summer for my birthday. And now I am old enough to make it whenever I want. Like when I offered to make it for a dinner party this last Saturday, without realizing first that the party is not till next weekend! First big mind slip Im going to blame on pregnancy brain! And I realized it seconds after putting it into the fridge to set for the afternoon. Why it couldnt have been just ten minutes earlier I’ll never know. So I called up my sister in law and had her family come out to help eat the massive dessert! And even then only half of it was gone. So I’ve been eating it for breakfast and snacks. Thats the only thing about it, its not a lasting dessert. So make sure you make it fresh, and you’ll be in love!

Ingredients

1 family size sara lee pound cake (or 2 small ones)

4 pounds strawberries (you can also add raspberries and or blue berries for different flavor!)

1 family size instant vanilla pudding made as directed

1 large cool whip

Shaved white chocolate

Then cut the pound cake into small cubes, wash and cut your strawberries. Make the pudding as directed and add cool whip to finished pudding. Shred your white chocolate. Now layer starting with the pound cake, then strawberries, then pudding mixture and top with white chocolate. Continue to add layers until your dish is nice and full!

Could it get any better than that! 5 ingredients and only 3 lines of instructions. Its just begging you to make it this summer. And I promise your guests will request it over and over again.

Mother Day Cupcakes

I did a big order for a Mothers Day Lunch yesterday. I think cupcakes are perfect for Mothers Day because its something little and just for them and just a little sweet! And if you were thinking of getting flowers why not get cupcakes that look like flowers! Its one of my favorites, I found liners that are full flowers with petals and everything. I did a set last year for a friends baby shower and fell in love. This time I did yellow for all the special moms. Both are beautiful and I cant wait to make more. It was such a fun order to make. 24 vanilla with vanilla buttercream and rainbow sprinkles for the kids, 24 vanilla with chocolate buttercream and white sprinkles, and 24 lemon with vanilla buttercream. The moms were all in the flower liners, and the kids got regular liners. It was a lot but it was so worth it. They all turned out so pretty! Then I packed them up all and delivered them in the morning. The best part was when she called me later that afternoon and opened the call with “I have bad news.”  Immediately I thought the cupcakes had spilt in the car ride to the event. (I only took them half way.) But instead the bad news was that she had already eaten 3 cupcakes! Music to my ears. And of course how could they be bad. I had 6 left over and they went even faster after company came for lunch. Lemon might indeed be my new favorite now.

So Hooray for cupcakes and Mothers Day. (Ps this is the first I get to celebrate myself!) And although you may not get lissables cupcakes for Mothers Day remember to do something special for the moms in your life! They give you 364 days of the year, so make their 1 special!

Mocha Chocolate Coffee Cupcakes

Not for children. Nope not all cupcakes are sprinkles and sugar rushes for those under 9. This is the sophisticated side of cupcakes. Baked with coffee right into the cake. (although you can barely taste it over the rich chocolate taste.) They are decedent and mouthwatering. Just plain good. I had a friend in town who is a lissables follower and it seems to be a trend that whenever a visit strikes cupcakes are always requested. That’s what happens when your biggest fan base is from another country.

So the request was made. And an experiment began. One that brought out the pregnancy emotions. Straight coffee did not like my butter cream recipe! And although its one of the first times one of my flavor experiments has failed I still was losing my mind. But no worries because in my house I always have hundreds of pound in butter and sugar, so we started from the beginning again. And this time it worked! Hooray. A few coffee beans later (thanks to Brandon for bribing a Starbucks barista with that smile of his,) and tada Mocha Chocolate Coffee Cupcakes! Yummy.

But the best part of them is that they loved them! For some reason I always panic when I dont hear back about an order. And then it makes my day when someone says they like them. But above that they LOVED them! Yay success. And probably a new favorite flavor. Who doesnt like coffee and chocolate? (O right both those flavors are my least favorite but Im opposite to everyone else.)

Baking Baking Baking

This week I have 120 cupcakes going through my kitchen. (again thank goodness I am not craving cupcakes. yet.) So day one fo the cupcake marathon is just plain chocolate cupcakes and vanilla buttercream. Sometimes perfect can be simple. Ive been trying out new chocolate recipes. Im not a huge fan of day one. (especially since I am writing this on day two and watching this recipe version bake is way yummier.) But it did the trick. Also I am really picky with my cupcakes, so it was good just wasn’t perfect yet. But they had a good cause, it was my brother in laws birthday yesterday. And they were actually in town so we could all celebrate in person.

I was too busy playing with my cute nephew who I never see because we live in different countries, to eat one. But everyone else loved them. I really enjoy watching my other nephew, the one who lives here, eat a cupcake. His theory is eat all the frosting at once, then discard the thing it came on. Too funny. Im sure I was that way as a kid too. And ps if your wondering that is just my extra cupcake crumbled and sprinkled on top for extra fun.
